In the cocktail shaker, add the apple juice, cognac, simply syrup, apple chunks, and ice. Shake vigorously. Pour all into a glass and add the champagne. Stir and serve.
No Alcohol: 1 ounce apple juice, 1/2 ounce pear juice, 1/4-1/2 ounce simple syrup (depending on how sweet you like it), apple chunks, ice, 3 ounces sparkling cider (If the sparkling cider is sweetened, skip the simple syrup.)
