Frozen Mango Dessert

  • 1/2 cup (120 ml) light coconut milk
  • 1 cup frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 1 frozen banana, sliced (Peel the banana and wrap it in a freezer bag. Freeze until it’s hard, but not rock solid.)
  • juice of 1 lime
  • slices of lime or pineapple
  1. Pour the coconut milk into the blender, and add the mango chunks, pineapple chunks, and sliced banana. Puree until the mixture is thick and the color is even throughout, about 2 to 3 minutes.
  2. Add the lime juice and puree for another 15 seconds. Immediately pour into martini glasses and garnish with a slice of lime or pineapple on the rim.
