Raspberry Oatmeal Crumble Bars

Adapted from Truvia®.
  • 2 cups (160 g) old-fashioned oats
  • 1 cup (113 g) whole wheat flour
  • 1 cup (120 g) unbleached all-purpose flour
  • 1/3 cup (64 g) Truvía® Baking Blend
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups (492 g) raspberries (fresh or frozen)
  • 1/3 cup (64 g) Truvía® Baking Blend
  • 2 teaspoons lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/3 cup (43 g) corn starch
  1. Preheat the oven to 325° F/165° C
  2. In the bowl of the stand mixer, mix together the oats, whole wheat flour, all-purpose flour, Truvía® Baking Blend, cinnamon, and salt. Add the unsalted butter and vanilla extract, and mix on medium speed for 2 minutes. Scrape down the sides of the bowl. Pour 2/3 of the oatmeal mixture into the prepared baking pan and press it down firmly, forming a crust.
  3. In the 2-quart bowl, toss the raspberries with the Truvía® Baking Blend, lemon juice, vanilla extract, and corn starch. Spread the raspberry mixture evenly over the oatmeal crust. Sprinkle the remaining oatmeal mixture over the raspberry filling.
  4. Bake in the preheated oven until the oatmeal topping is golden brown, about 35 for 40 minutes. Remove from the oven and allow to cool, then serve.

Recipe Notes

Raspberries are not in season here, but I use frozen raspberries, and they work very well. I like to add a little vanilla extract to the fruit mixture for a little more depth of flavor, but it’s not in the original recipe. Depending on the tartness of your raspberries, you may want use a little more or less Truvía® Baking Blend with the fruit. The crumble has oatmeal, and to get even more whole grains, I use part whole wheat flour and part all-purpose flour.
