Sushi Stuffed Avocados

I’ll be the first to admit that I don’t make stuffed foods. Michael makes stuffed pizza, but that’s as far as it goes around here. I think I made stuffed manicotti one time and it was not pretty because the pasta tubes kept cracking and spilling the filling out. Too much work, I thought. It’s not that I don’t enjoy stuffed foods, because I love stuffed pastas and tomatoes and will occasionally eat stuffed peppers as long as there isn’t any meat in them, I just find that stuffing requires more time and patience than I have to invest. So when I saw that Cook Sister! was hosting this month’s WTSIM and had chosen stuffed fruits and vegetables as the theme, I figured I would have nothing to contribute and I decided to not participate this time around.
But it bothered me. It kept nagging at me. And the more I thought about stuffed foods the more determined I became to create something stuffed that 1) I would enjoy and 2) wouldn’t require loads of time and patience. I forced myself to envision stuffed vegetables and fruits, trying to decide what would work for me. The inspiration came at the Wegman’s sushi counter. Read more
Hot Rolls, One Dozen Ways

One recipe, many possibilities…
Easter is fast approaching, and of course that means it’s time to plan for Easter dinner. In true just-moved-in fashion, I am miserably behind on preparations; however, I do know that we will have a spiral-sliced honey glazed ham and some of these homemade hot rolls. The rest is yet to be determined.
I began making these yeast rolls years ago, and I reserve them for special occasions. The original recipe comes from my old Farm Journal’s Homemade Breads cookbook, which explains how to use the same recipe and make a dozen different types of hot rolls. Slow Cooker Beef Barley Soup

It’s official—we’re moving. Over the Christmas holiday we learned that Michael has a new job in the DC metro area, and now we’re in the midst of selling a home and looking for another. I’m excited about returning to that area and I think it will be very good for our family, but right now it is a *lot of work* and I don’t see that changing much in the next few months. Frankly cooking is not very high on the priority list at the moment, not when the house has to be kept immaculate for potential buyers to come visit. Oh, and our three little boys need some attention every now and then (every two or three minutes).
I never really gave this much thought until now, but all of this prepping to show the house has made me realize that I often make a real mess in the kitchen. I mean, some days it looks like a kitchen bomb went off. Read more
