Pumpkin Pie Cookie Bites

We had some extra pumpkin pie filling, so I baked it as a simple custard. Michael came up with this idea for serving the pumpkin custard to the boys, and they really enjoyed it. It’s also an easy way to turn pumpkin pie into a finger food for holiday parties.

I’m catching up on my Thanksgiving food blogging. My original plan was to post the last three recipes on Thanksgiving day, but somehow the day got away from me in the midst of making dinner and taking care of the boys. So I will post them throughout today.

Rhubarb Pie

This is an old recipe that Michael’s mom has been making for years. The family loves rhubarb, but she is a bit superstitious about growing it. It takes a year to get it started, and she says that everytime she ever planted rhubarb they would have to move before she even got to harvest it!
She copied this recipe from an old, unidentified cookbook, and the recipe has specific instructions on how to choose and prepare the rhubarb: “For a mild flavor, choose early pink rhubarb. If tender and pink, do not peel. Cut into 1″ pieces (1 pound makes 2 cups). Amount of sugar depends on tartness of rhubarb. Early rhubarb requires less sugar. Make your pie shallow.” Read more
Maine Blueberry Pie

Maine is our spot. We vacationed there while dating, got married in the garden of the Bar Harbor Tides bed and breakfast overlooking Frenchman Bay in Bar Harbor, took our wedding photos throughout Acadia National Park, and went back to visit when I was pregnant with our first child. Sadly, the last visit was four years ago and various circumstances have prevented us from going back. But every year in the summer and fall we think about going back and hiking through Acadia and enjoying Maine wild blueberries, and if for some reason we won’t be able to go we say, “I miss Maine.” Read more
Grandma’s Retro No-Bake Cheesecake

I love this retro recipe from my grandmother. She started making this sometime in the 70s, and I was in heaven with this introduction to cheesecake. I’ve been a cheesecake junkie ever since. I prefer baked cheesecake, but I still whip this up when I need a quick fix (like today). I often add some mini chocolate chips to the cream cheese filling just for fun, and I like to serve it with sliced strawberries when they are in season.

Pie Crust

For years I did not make pie crust. I was scarred from many attempts with horrible results, and I finally stopped trying and bought grocery store pie crust. Blech! A couple years ago, I was ready to try again. I found this recipe, and it has rescued my pies from the horrors of grocery store pie crust. Don’t skip the refrigeration step, because it allows the dry ingredients time to fully absorb the liquids, which renders a tender, flaky crust. I use the food processor method, but you have to be careful and use short, quick pulses, otherwise you can overheat the dough and cause the butter to melt.
I have found that the pie crust freezes well, just wrap it in a couple layers of plastic wrap and then put it into a zip freezer bag.
