Around this time last year I received an email from Susan (Farmgirl Fare) telling me that I had won a box of fresh chanterelle mushrooms from Marx Foods in her giveaway. Roasted Eggplant with Gruyere

When Michael goes on travel I find myself craving comfort food. I’m sure the phenomenon is related to my energy levels, which take a dip during the weeks he is gone and are in direct correlation to the high energy my boys possess. Top that off with being awake way into the night trying to take care of all the chores that don’t get done during the day, and I start each morning with a sleep deficit and a craving for foods that taste good and give me a warm, fuzzy feeling on the inside.

Last week while he was on his latest trip, I found myself craving roasted eggplant, so I pulled out a comfort food recipe. This is another one of those dishes that doesn’t look like much when you prepare it, but the good, simple ingredients promise something more. The garlic slivers roast right along with the eggplant and infuse it with flavor, and the texture is smooth and creamy. Preparation is pretty easy and you can even do it in stages if you need to. You can roast the eggplant and process it the night before, keep it in the refrigerator overnight, warm it the next day while sauteing the mushrooms, then assemble and bake just before serving.

Shrimp with Mushroom Tapas and a Cookbook Give Away

In 1985 Penelope Casas introduced U.S. diners to the world of Spanish tapas with the success of her book Tapas: The Little Dishes of Spain. Casas is a recognized authority on Spanish cuisine and has published five books on the foods of the region and writes about Spanish food and travel for several major publications. She also leads culinary tours of Spain, a piece of information I have tucked away for my future (but still unplanned) trip to Spain. Last year she published a revised version of her classic book, and I was fortunate to receive a copy for review from the folks at La Tienda.

The book has over 300 recipes, of which 50 are new, and has chapters devoted to tapas in sauce, marinades and cold tapas, tapas with bread or pastry, tapas with last-minute preparation, ingredients and cookware, sources for Spanish products, and tapas menus. The ingredients and cookware section is like an encyclopedia of Spanish cooking, with detailed descriptions of such things as queso Manchego, Marcona almonds, earthenware dishes (cazuelas), and quince paste (membrillo). The menus are very helpful for planning a tapas party, and I can see us having some kind of tapas party in the next few months. The book is very thorough and the only thing I could wish for is more photos of beautiful tapas!

We selected a couple tapas to make for Michael’s little birthday dinner (Happy Birthday, honey!), and I wanted to serve one with seafood and one with vegetables. I chose the Shrimp and Mushrooms in Almond Sauce (Fricando de Langostinos) and the Stewed Zucchini, Peppers, and Tomatoes (Pisto Manchego). Steak au Poivre with Sauteed Porta Bella Mushrooms

Steak au poivre

Most of our evening meals are simple, often pulling from the freezer any leftovers from my weekend cooking marathons. We spend our energy taking care of the boys, coaxing them to eat their dinner and use good manners, and conversation centers around the day and what the boys did in school or any new milestones. We try to minimize the chaos, but I’ll tell you we’ve heard it all during dinner.

“Daddy, I peed on the potty all by myself!”

“I don’t want to use my fork!”

“I don’t like this. I can’t eat it.”

“Daddy? Mommy? Have some more [fill in the blank]?” (pause) “Oh. May I have some more [fill in the blank], please?”

“Mommy, I love my vegetables!” (Usually said after being told there will be no dessert for little boys who don’t eat all their dinner.)

“Baaaaaaaaaaaaaaaaaaaaaah!” [airplane noises]

“Oh, please don’t put that in your hair.” (pause, sigh) “OK, I guess you need a bath tonight.”

“Ghhhh!” (Said while the toddler throws his food or bowl or cup or spoon on the floor. Usually followed by tears because now he doesn’t have the food/bowl/cup/spoon/whatever.)
