I was excited to see that Jaden would be our host for the October Daring Cooks challenge, especially since I finally got to meet her at BlogHer Food, but when I scrolled down and saw we would be making pho (pronounced “fuh?”) I almost got week in the knees. I’ve eaten pho at Vietnamese restaurants but have never made it at home, and none of my family had ever tasted it. I couldn’t wait to give them a taste of this soup that won my heart long ago. Fresh is a popular chain of vegetarian/vegan restaurants in Toronto, Canada with three published cookbooks teaching how to cook Fresh food at home. Our host Debyi of Healthy Vegan Kitchen chose this fun challenge for us, and I for one am grateful because this is the first time I’ve ever made Indian food and witnessed our two older boys actually eat it. Builder Guy (6) has recently developed a taste for spicy foods—good thing because we like our spices—and Top Gun (5) is finally coming around and trying new things. Monkey Boy is still a picky three-year-old, but he did eat one of the plain dosas. We thought the dosas were delicious and would eat that coconut curry sauce on just about anything. Read more

When I saw this month’s Daring Cooks challenge announcement, my pulse quickened and I envisioned a moist, colorful, flavorful Spanish rice. The sofregit seemed perfect for the season, with fresh tomatoes, peppers, and garlic, and this was a perfect opportunity to test out the paella pan (paellera) Michael gave me for Christmas. That I still had not used. Time to get cracking.

We used our homegrown tomatoes and garlic in the dish, loving the fresh flavor of the tomatoes and the intensity of our garlic. As I studied the instructions, I realized the recipe only used a small amount of the sofregit, but we enjoyed the flavor so much we added more along with a dollop of the allioli to each serving of rice. Each taste was like a game of roulette, not knowing when we would find the sharp bite of the allioli. Read more

The July Daring Bakers’ challenge was hosted by Nicole at Sweet Tooth. She chose Chocolate Covered Marshmallow Cookies and Milan Cookies from pastry chef Gale Gand of the Food Network.

The Daring Bakers have made all sorts of challenging desserts, some before my time and some since I joined two years ago. I’ll never forget my first, the Strawberry Mirror Cake, which challenged both my skills and patience; or last year’s Filbert Gateau, which tasted fabulous but took me 15 hours to make; or the Opera Cake and the weeks I spent planning and practicing for it. Yes, we have done our share of difficult challenges. This month the challenge was easier though no less enjoyable, and actually it couldn’t have come at a better time as I need a little breathing room until summer vacation time is over and the kids are back in school. I remember first tasting Chinese dumplings and potstickers when I lived in Saipan, and I always liked ordering them in restaurants, but then I visited Hong Kong and southern China and got hooked. It was so fun to see the dim sum trays in the restaurants, taste different things, and try to figure out what was in all the fillings. Though I have enjoyed Chinese potstickers and dumplings all these years, I’ve never made them from scratch—getting bags of gyoza from Trader Joe’s is just too easy—so I felt a huge amount of excitement when I saw Jen of Use Real Butter had challenged the Daring Cooks to make her family’s recipe for Chinese dumplings and potstickers. They chose Apple Strudel from the recipe book Kaffeehaus: Exquisite Desserts from the Classic Cafés of Vienna, Budapest and Prague, by Rick Rodgers.

I felt a lot of excitement for this challenge because I adore puff pastry and have wanted to try making my own for some time, and of course anything with apples, spices, and rum-soaked raisins just has to be good, right? And besides, this gave me a chance to play around with my long-forgotten high school German and prepare for my trip to Germany in a few weeks! Read more
