Chicken Noodle Soup

This is the soup I want when I’m under the weather. The soup is very lightly seasoned with only a little salt and some poultry seasoning, just enough to add some flavor but not bother the palate when I’m not feeling well.

I usually make a batch once every three months or so and freeze it so that I always have some ready to pull out.

When I first made this a few years ago, my husband had recently been to New Orleans, and said this tasted almost exactly like the great jambalaya he had on his trip. We make this jambalaya a few times a year, changing it up a little each time depending on what we have on hand. This makes great leftovers, and we usually freeze a couple containers of this, just thaw it out overnight in the frig for a quick weeknight meal or lunch.

Chicken Tortilla Soup

My husband pestered me for several years about making some tortilla soup for him. I’d never had it, so I wasn’t exactly sure what it should look like or taste like, and I wanted it to be as authentic as possible. I found a slow cooker recipe, but I was afraid that it would turn out too watery or just not taste authentic. So I tried it but made a couple small changes. My husband really liked it and said it came in a close second to a good tortilla soup he had in New Mexico. So this one is now a regular for us. You can also make it on the stove (directions below). We like it with chips, guacamole, and a couple Coronas.

Cream of Roasted Tomato Soup

I have been searching for a new tomato soup recipe. I’ve tried many versions over the years, and just never found any that captured my imagination and made me want to make it over and over again. I happened to get a deal on some good roma tomatoes, odd for this time of year, so I felt that I needed to try once again to find a good tomato soup recipe. And this is it. Roasting the tomatoes with the spices adds a wonderfully smoky, spicy taste to this creamy soup. My husband tasted it and his eyes grew wide as he said, “Wow, that’s really good.” This is now on our regulars list.

Winter Minestrone

Minestrone is a very versatile soup. With only a few basic ingredients—pasta, beans, stock, vegetables—you can create a beautiful, hearty soup. What you do with it is really up to your imagination. This is one of our favorite versions, a delicious soup for the winter months. We like to have this with Three Day Crusty Hard Rolls.
