
Our oldest son, Builder Guy, started reading at an early age and since he was a toddler has taken his favorite books everywhere we go. One of his current favorite books is Mouse Cookies and More: A Treasury. The book contains four stories: If You Give a Pig a Pancake, If You Give a Mouse a Cookie, If You Take a Mouse to School, and If You Give a Moose a Muffin. Each story has accompanying recipes and songs to extend the story, and the book comes with a CD containing read alouds and performances of the songs. The stories by Laura Numeroff are circular, with the ending taking the reader back to the beginning after a fun romp with animals, food, and some cute storytelling.
Builder Guy took the book on all our trips this summer and made cookies with both of his grandmothers, and these classic gluten-free peanut butter munches were his favorites. I was so proud of him. He read the recipes out loud and made sure he had all the ingredients, and then did most of the work himself while Grandma supervised. I stood off to the side taking pictures, reveling in the moments, and wishing I had done more cooking with my grandmothers.

PEANUT BUTTER MUNCHES
Adapted from Mouse Cookies and More: A Treasury, by Laura Numeroff and Felicia Bond.
Makes about 30 cookies.
Equipment
stand mixer with paddle attachment, or hand mixer and large bowl
cookie sheet, lightly greased or lined with parchment
wire cooling rack
Ingredients
1 cup (256 g) creamy peanut butter
1 cup (175 g) granulated sugar
1 large egg
Preparation
1. Preheat the oven to 350° F/175° C.
2. In the bowl of the stand mixer, combine all the ingredients well.
3. Use your hands to roll the dough into 1-inch balls, then drop them onto the prepared cookie sheet.
4. Bake in the preheated oven for 10 to 12 minutes, until golden brown. Press the tines of a fork into each cookie while still soft. Allow to cool on the pan for about 3 minutes, then remove to a wire rack and cool completely.
