We are not what I would call a health concise family. the tradition is to not eat until the arly dinner time (somewhere floating between traditional lunch and traditional dinner time.) If dinner is delayed much beyond that, a breakfast of cereal and milk, or, if there is company at the house, donuts, usually does it.
i like your idea better - something in the fridge that can go in the oven. also, because I live where there is distance between me and many friends, I attend many potlucks during the holidays which last over night. most of the women bring breakfast for these, and any of these ideas would be awesome.
Our family does have traditional breakfast for the weekend days after thanksgiving - leftover pie!

I don't usually plan something special. I just make something really light and healthy. This year it was scrambled eggs and veggies with fruit salad.
