I did manage to pick up a paella pan on clearance - good spun carbon steel. I am considering trying paella on the grill..... have you had any luck? It's more about using whatever you have on hand, I think. If fresh seafood is what's available, that's what goes into the pan. If it's chicken or fresh vegetables, then so be it.
