    A paella usually is so expensive that I give up everytime I start thinking about making one… this one is a healhty and yummy alternative!

    Cris, it amazes me how what was once peasant food is now too expensive to make! It’s more about using whatever you have on hand, I think. If fresh seafood is what’s available, that’s what goes into the pan. If it’s chicken or fresh vegetables, then so be it. This is peasant food, after all! :)

    This is a great light summer version of the dish. I did manage to pick up a paella pan on clearance – good spun carbon steel. I am considering trying paella on the grill….. have you had any luck?
    My daughter would appreciate this dish as she is veggie. I’ll have to make it for her when she’s home. Great dish!

[...] The first course was appetizers: Gouda cheese, grapes, and Vienna sausages.  Caro arranged these beautifully!  And oh my, they were yummy!   The next course we made together was paella!  I have been wanting paella since my mom and I lived in Riverside and she used to make a version of paella from the Minute Made Rice recipe.  It was so fresh and delicious, we put all sorts of vegetables and then Jeremy cooked up salmon to go in it.  Even the kids ate large helpings of it (veggies and all).
