My father was born and raised in Havana,Cuba, and came to the US when he was 28. His mother NEVER put tomatoes or tomato paste/sauce in this dish. Peas are not optional and neither is roasted red pepper (or pimiento) for garnish. I know there are lots of ways to make this dish, but tomato? Never! I grew up eating arroz con pollo.
