		<description>This is very similar to the pumpkin soup we are being served throughout South Korea. Very welcoming on the bitter cold days they have here. One of our Korean host stated they believe soup like this fends off getting a cold or flu. They also serve a very simple citrus tea at the end of the meal that they believe has a similar effect. I&#039;ve both the soup and tea at every lunch and dinner here over the past week.</description>

		<description>I LOVE this soup!  I have made it over and over again in the fall and winter months, and we even served at for a starter at Thanksgiving dinner last year for our families- huge hit!  I use Smart Balance instead of butter, and skip the whipping cream and sugar to cut down the calories.  I also add a pinch of saffron after I saute the leeks and garlic just before I add the broth, squash and herbs which also adds a nice flavor. A handmixer blends this beautifully.  I enjoy the winter just because I can make this soup- so great.</description>
