Here’s another installment of my monthly yummy finds list. These are all very simple and light for summertime.
- Cold Soba Noodles with Dipping Sauce (Just Hungry) – Believe it or not, the first time I had cold soba was on a flight from Japan to the U.S. Breakfast service was coming around, and the flight attendant asked me if I wanted the American breakfast (eggs, sausage, etc) or the Japanese breakfast (cold soba). I think she was quite surprised that I chose the soba, and I’m so glad that I did! My love affair with soba was born that day. Maki does a beautiful job of demonstrating this simple Japanese fare, which makes a nice dish for hot summer days and nights!
- Soy-Grilled Mahi-Mahi (Kalyn’s Kitchen) – I’ve been grilling mahi-mahi for years, and I think this recipe is a keeper. It did taste a bit sweet to me, so I reduced the sugar and it was just right. Kalyn is correct that mahi-mahi is a fish, not a dolphin, so don’t believe any of those ugly rumors you hear.
- Lemon Mint Cucumber Water (A Veggie Venture) – Flavored waters are perfect for summertime, and this one is nice and refreshing!
































So glad you liked the mahi mahi recipe. I might try making it a bit less sweet myself, since I’m not that into sweet things. But it’s a keeper for me too. Thanks for the mention.
